Tonkatsu Sauce, Okonomi Sauce & Yakisoba Sauce – Just One Cookbook Kitchen Pantry

We refer “sauce” (pronounced So-su) as a thicker version of Worcestershire sauce. So-su comes in three types: thin, medium-thick, and extra thick.
Thin sauce is called Usutah So-su and this is similar to Worcestershire sauce. The medium-thick sauce is called Chuno So-su. The thick one is Tonkatsu Sauce which is used for Tonkatsu or other deep fried dish. The major So-su brand in Japan is called Bulldog.
In addition, there are Okonomi Sauce for Okonomiyaki (savoury pancakes) and Yakisoba Sauce for Yakisoba Noodles.

Substitution: Tonkatsu Sauce mainly consists of vegetables and fruits (tomatoes, prunes, dates, apples, lemon juice, carrots, onions, celery, etc) and more than 10 kinds of spices along with soy sauce, vinegar, and sugar. I’ve tried to create a short cut recipe by using other condiments but they are not exactly the same. However, some of you have a hard time finding Tonkatsu/Okonomi/Yakisoba Sauce, so here’s something close that I come up with.
Ingredients:
- 1 Tbsp. Worcestershire sauce (Usutah So-su)
- 1 Tbsp. Ketchap
- 1/2 Tbsp. oyster sauce
- 1 1/8 tsp. sugar
Instructions:
- Combine all the ingredients in a small bowl and whisk together. Adjust the sauce according to your liking.

- 3 Tbsp. oyster sauce
- 1 tsp. soy sauce
- 1 tsp. sugar
- 1 tsp. sesame oil
- Salt
- Freshly ground black pepper

- Combine all the ingredients in a small bowl and whisk together. Adjust the sauce according to your liking.
