Banana Bread Recipe | JustOneCookbook.com My best friend gave me this banana bread recipe more than 10 years ago.  This is so good that one loaf won’t last two days at our house.  Enjoy!

Banana Bread Recipe

Prep Time: 15 minutes

Cook Time: 60 minutes

Yield: Makes 1 Loaf

Banana Bread Recipe

Ingredients:

  • 1/2 cup (1 stick) butter, soften
  • 1/2 cup sugar
  • 2 eggs, room temperature
  • 1 tsp. vanilla
  • 1 2/3 cups flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 Tbsp. vegetable oil (I use canola)
  • 4 Ripe bananas (one for decoration, sliced)
  • 1/2 - 2/3 cup raisins (optional)

Instructions:

  1. Preheat oven to 350F and grease a baking dish (bottom and sides).
  2. In the stand mixer, add butter and sugar and combine well.
  3. Add eggs one at a time and add vanilla next.
  4. Slowly add half of flour and slowly mix well. Then add the rest of flour and mix.
  5. Add baking soda, baking powder, and oil.
  6. Add 3 bananas and mix. If you want to add raisins, add here.
  7. Pour the mixture into the baking dish (I used 8" x 8") and put slices of 1 banana on top as decoration.
  8. Bake for 1 hour, or until an inserted skewer comes off clean. Cover the top with aluminum foil if the top burns too fast. After cooling down for 5 minutes, remove the bread from the baking dish. Ready to serve after 10 minutes.

Hi Nami,

We love banana bread. I owuld love to try yr recipe, however my husband cannot take butter, can I replace the butter with oil?

Hi Lin! Thank you for being interested in this recipe and asking the question. However…I’m not really a baker (as you might have guessed) and I am afraid I can’t answer to this question. I assume it’s replaceable but I’m not sure how much oil is equivalent to the amount of butter in order to get the right texture. So sorry I can’t help you with this. :-(

What is the weight of banana to be used? Do we have to mash them?

Hi Jae, it’s about 600-700g (1.5-1.8oz). I break and mash bananas with my hands when I put in. Thanks for asking the questions!
