Chicken & Corn Chowder with Roasted Potato Recipe | JustOneCookbook.com Here in the US, families are busy getting ready to celebrate Thanksgiving holiday as markets are filled with crowd preparing their big meal.  I’ll be spending the holiday with my family so I’ll be taking this Friday off.

A while back I won Family Spice Blog‘s giveaway and received Frieda’s Produce‘s potatoes, pearl onions, a cookbook, and a bag (Thank you Laura!).  I have never purchased pearl onions before so I was really excited to try these onions.

Chicken & Corn Chowder with Roasted Potato Ingredients

Around the same time I received the giveaway package in the mail, I was thinking about making this roasted potato and corn chowder featured on Mom de Cuisine so it was perfect timing to try out using the ingredients I had received.  I’ve prepared corn chowder many times before but I’ve never roasted potatoes before adding in the soup. It turned out to be a brilliant idea and as a potato lover myself, i did enjoy this soup a lot.  My son who loves corn soup had 3 bowls in one night.  It was so delicious that I’ve already cooked this soup twice.  The only changes I made from the original recipe was that I purposely bought rotisserie chicken the previous night and use the leftover meat to cook this soup the following day.  I also added fresh thyme in the soup and that’s pretty much it.  It’s getting really chilly these days and this is definitely a nice soup to keep yourself warm.

Chicken & Corn Chowder with Roasted Potato II

Chicken & Corn Chowder with Roasted Potato

Prep Time: 15 minutes

Cook Time: 45 minutes

Yield: Serves 6-8

Chicken & Corn Chowder with Roasted Potato

Ingredients:

  • 1 lb baby red potatoes cut into 1/2 inch cubes
  • 1 large onion, diced (I used pearl onions)
  • 2-3 tablespoons olive oil
  • 1/2 tsp. salt
  • Freshly ground black pepper
  • 4 slices bacon (optional for garnish)
  • 2 Quarts (1900ml) chicken stock
  • 3 cups cooked, shredded chicken (I used Rotisserie chicken)
  • 1 can cream style corn
  • 1 can whole sweet corn
  • 1 cup heavy cream
  • 1 Tbsp. fresh thyme (plus some for garnish)
  • 1 tsp. salt, plus more, to taste
  • Freshly ground black pepper

Instructions:

  1. Preheat the oven to 375F (C). In a large bowl, toss potatoes, onions, olive oil, salt, and pepper together. Place the mixture on a baking sheet and roast until the skewer goes in side smoothly and the potato skin is crispy, about 30-45 minutes. Remove from the oven and set aside.
  2. While the potatoes are roasting, fry the bacon until crisp. Drain the extra oil on paper towels. After the bacon has cooled, chop into small pieces.
  3. In a large pot, bring chicken stock to a boil. Add the potatoes, chicken, both cans of corn, and thyme to the broth. Bring it to a boil again and once boiling, skim the scrum and fat from the soup. This is the important key to have nice refined soup, so don’t skip this process. Lower the heat to medium low and simmer for 5 minutes. Keep skimming during this time.
  4. Add heavy cream, salt, and pepper to taste, and cook until heated through, about 3 minutes. Serve into bowls and top with bacon and fresh thyme as garnish.

I have never thought of roasting potatoes pre soup. My husband isn’t a huge fan of soup because he says it doesn’t fill him up. The big chunks of this soup could certainly change his mind.

Delicious…what more can I say.
When I was “young, rich and famous” (in other words: single…just kidding), I used to go to US for Thanksgiving, I have family in Florida and New Jersey, and my big brother lived in NY, so I enjoyed being ther for that holidays, having tons of food, different ones, in FL more like latin meal, in NJ I had Arabian (because my cousin’s wife) and in NY, well, my brother was single, so we had just some mash potato and pecan pie.
I like traditions, and more than that when tradition is mixed with our roots.

When I think of chowder, I think of seafood and living in Sydney, there is no other way for me to do it other than using fresh seafood, fortunately or otherwise :)

I love chicken and corn chowder – it’s so satisying and tasty, though it’s important to use good corn because otherwise it can really give a funky taste to the chowder. I never tried it with roast potatoes before – I bet that gives a whole new consistency dimension to it… I’ll have to do that next time! I used to have an oven which had a rotisserie inside… couldn’t take it with me when I moved to a new apartment – I miss it so much sometimes :(

Hi Nami-I am so thankful for you as my friend and… to have met you in person while I was in San Francisco for the FB Festival…even though you couldn’t attend, you made a special effort to meet up with me and Jo in person. Nami, I can never stop drooling over your beautiful photos. The table setting etc is just so pretty. I don’t think I have the patience sometimes. LOL.. I MUST TRY THIS! My family loves sweetcorn, esp my gals. They can eat sweetcorn everyday and will never get sick of it! :D
I cooked chicken corn chowder twice but just added potato cubes. Adding roasted potatoes with skin on looks and sounds so much more tastier. ;)
