Love all the steps but I am wondering why do you have to keep it for five days after churning in ice cream maker. Wouldn’t it be ready the same day?
Good question – I assumed it helps to enhance the flavor better. According to the original recipe, the chefs spent some time to get the perfect recipe (or something like that) and this was the result. I’m sorry I don’t know the right answer for your question.

Thanks to your son for the suggestion! From looking at the recipe, this is like a caramel chocolate ice cream. Oh MY! I’m one of those who, if given a choice between chocolate and caramel, I don’t know which one I would pick. So with this ice cream, I’m in heaven for sure! I’ve been looking for a chocolate ice cream recipe because the kids have been asking me to make some. How timely your post is! Your choc ice cream looks so professionally made and I’m impressed with how many step by step photos you’ve managed to take. Looks really really yum! So does it make a difference if I eat the ice cream 1 or 5 days later? I might need to get a freezer that has a lock and key (or maybe no key!).

Hi, I love ice-cream… I make often ice-cream in summer but this year summer has been very very cold so only made one, vanilla ice-cream and it was delicious. Last year I made chocolate ice-cream, the recipe was very similar to your, only I used more milk and less cream.

Oh my goodness this chocolate ice cream looks INTENSE. Great minds think alike, it seems–I actually have a chocolate sorbet base chilling in the fridge right now. This recipe requires patience, for sure! Sounds worth it! I’m not an ice cream eater, but I am a bonafide chocoholic! I had a tough time when I eldest started kindergarten. Then I realized that 3 hours a day was not enough time to get what I needed done! I’m having a harder time with him starting middle school. Makes college that much closer!

Hi there. I have just found your blog via Merci Mama (also new to me), I too, like Swee San, would like to know what the purpose of the 5 days process is. Do you know? Is it to do with flavour, or texture, or both? DOes it taste like it has a swirl of caramel in it, or does this just get blended in with the chocolate flavour? I was intrigued to see that both your recipe here, and the gelato recipe (not 5 days and no cream) on Merci Mama, contain the caramel stage. I have never added this to chocolate ice cream before, hence the question. I am now going to explore your blog some more!
Original recipe didn’t say why chefs at St. John waited for a couple of days. Maybe the flavor to ripen? I’m sorry I cannot answer your question. The caramel is blended in the chocolate flavor. Thank you for checking my blog!
