When my family decides to eat out for dinner, we start asking each other “what do you want to eat?” including our children. My son usually responds immediately and says “Sushi! Sashimi!” and my daughter goes “Chinese food!” My husband asks, “how about Ramen guys?” and kids usually say nah.
I always crave for something I can’t cook or I don’t eat often, so my vote is always to eat Peruvian or Thai food or maybe Italian food. Unfortunately, it is very rare that my pick wins (I’m just being nice to let my family pick!
).
A month ago as our family started the similar conversation again in the car, my son actually said “Thai food!” Eh? That threw all of us for a surprise. It was rare for him to say that. My husband asked him why and he said “it’s because mama’s favorite food.”
Sweet. He knows I love Thai food. When I saw this recipe at Valerie’s Kitchen, I bookmarked right away because I knew I would want to eat it one day and I wanted to have the recipe handy. I’ve cooked this coconut curry recipe at least 3 times after seeing the recipe. It was easy to prepare and delicious! If you enjoy coconut curry and never tried making it before, I suggest you give it a try. Have a wonderful week ahead!
Ingredients:
- 3-4 Tbsp. vegetable oil
- 2-3 Tbsp. curry powder
- 1/2 large onion, diced
- 1 red bell pepper, cut into strips
- 1 Tbsp. minced garlic
- 1/4 tsp. crushed red pepper
- 1.5 lb boneless skinless chicken thighs, cut into 1/2-inch chunks
- Salt and pepper, to taste
- 1 (14 ounce) can light or regular coconut milk
- 1 (14.5 ounce) can stewed, diced tomatoes
- 1/2 of (15 oz) can tomato sauce
- 2 Tbsp. sugar
- 2-3 cups cauliflower florets, rinsed
- 6 mushrooms
- Steamed Rice
Instructions:
- Heat oil and curry powder in a large pot over medium-high heat for 2 minutes until it turns brown. Be careful not to burn.
- Stir in onions and red bell pepper, and cook for 2 minutes.
- Add garlic and cook for 1 more minute.
- Add chicken, tossing lightly to coat with curry oil.
- Season with salt and pepper to taste. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.
- Pour coconut milk, tomatoes, tomato sauce, sugar, and crushed red pepper into the pot, and stir to combine.
- Add cauliflower. Simmer, uncovered, stirring occasionally, approximately 30 to 40 minutes.
- Serve over rice.

Beautiful Curry Nami!! I love Thai food too. I think it’s one of my favorites to dine out… but I never get to go either these days. My kids like more American foods like burgers and pizza if we go out. We actually did Mexican recently and they loved it. So maybe we’re moving in the right direction.
All I know is your son is a total sweetheart for picking Thai just because you like it. Now he’s going to grow up to be a very considerate man someday.

When I was little my parents never asked us what we want to eat (unless our birthday) or where we want to go. Now I always ask my kids and alwas think if it’s correct or not, you know, each one wants something different all the time. So it was a kind of relief when you said that asked your kids too…!!!

I did attend to a Thai demo last week and the food was amazing, I also did some rolls and a lemongrass soup myself for my men to try and they loved it so i think my chances are getting better when it comes to where are we going to eat in the future.. Yay!

When I was reading your post about asking your kids where to go out to eat, I was smiling to myself. Because that’s exactly what happens at my place. And usually my daughter gets to pick. We love Thai, chinese and sushi. So it works out great. I don’t cook any of this at home.

The recipe looks great, problem is I’ve discovered Trini and I would get stomach cramp after eating food with coconut milk, it’s the strangest thing, since we were fine with them until last year, think we can do without the coconut milk or substitute with coconut juice?
Hi Cindy – hmm coconut juice/coconut water is thinner than milk so I’m not sure if the result will get creamy like it’s supposed to. But aromatic wise it should be close. Sorry I can’t help much with your question…

The Brazilian Steak house was decent, I got one of those Restaurant.com certificates (paid $2 for a $50 certificate when they were having a special), so dinner ended up being $60 total (with 18% tips). We are not big eaters so the restaurant always wins, but normally when we go out it’s usually around $50-60 anyway, and it’s not too shabby. My favorite is actually the grilled pineapples, they sprinkle cinnamon all over then grilled the whole fruit, very fragrant!
Oh my what a fab looking curry Nami. I dont know why but seeing a curry on your blog makes me happy- even though its Thai. I LOVE thai food, its my second fav after indian & luckily me & my husband share that love. So its a easy deal for us whenever we go out. Love the styling in your pictures, its not so easy to make a curry look good..well done!

Thai is my favourite, too! Since I was a child! (My 5-year-old’s favourite is salmon sushi!!) thai food is my absolute favorite also, though I’ve never been able to recreate it very well at home. I’ll have to try this delicious curry!
Thai food is one of the foods I have nick-named “happy food” (Japanese and Indian are the other two, and most recently Vietnamese Pho). I do love a good curry and the secret is definitely cooking out the bitterness of the spices and making a gorgeous and fragrant paste. This really looks tempting but sadly I shall have to wait until I am able to consume coconut milk again (we’re on a low glycemic diet to kick start our metabolisms).

I bought this curry powder from an Indian market. I used to use S&B too, but then I wanted to try authentic one, so I went to the Indian market to grab one package… only problem is that it comes in a big package (very cheap though). I must use a lot of curry powder in my cooking. Haha.

Hello Nami, so good to be here again! We are similar – when it’s time to dine-out, I usually suggest something I seldom cook at home and my husband will suggest burgers or pizzas (certainly not my top picks though I also seldom cook burgers and pizzas at home!)

What a lovely son! You must be the apple of his eye and long may it last. Thai is my favourite and my kids love it too so it’s an easy decision for us. I haven’t tried Peruvian cuisine. We don’t have a lot of South American restaurants or Mexican restaurants here in Australia probably because we haven’t had many migrants from that part of the world. I’d love to try Peruvian cuisine at some stage xx
