Lately I receive quite a bit of emails from readers who are new to cooking in general. I’m really happy to hear that my recipes are easy enough for them to give it a try and that they are enjoying cooking Japanese food. Some asked me if I have very easy dessert recipes and this Easy Apple Pie recipe came to my mind.
There are SO MANY cooking websites and food blogs out there where they specialize in baking. This is too easy to be called a “recipe” but I remembered I was very happy to learn how to make this very quick apple pie from a friend. This pie is not like an apple pie from a famous bakery, yet considering how quick and easy to make this, it’s such a rewarding dessert when the fresh baked apple pie comes out of the oven.
Enjoy this pie with vanilla ice cream to make your own Apple Pie à la Mode. I think this was the very first baked goods that I learned how to make. If you haven’t tried baking easy pastries before, please give this recipe a try. Have a wonderful week everyone!
Ingredients:
- 1 Fuji apple
- 1 Tbps. butter
- 3 Tbsp. sugar
- 1 frozen puff pastry sheet (Each box comes with 2 sheets)
- 1 egg yolk
- 1-2 sprigs fresh Rosemary (optional)
Instructions:
- Peel and cut the apple into 1/4 inch pieces.
- In a small saucepan, melt butter and add apples and sugar.
- Stir occasionally and cook on medium low heat for 10-15 minutes. When the apple is more translucent and most of liquid is evaporated, remove from heat and set aside to cool down.
- Preheat oven to 400F. Defrost the puff pastry sheet for 10 minutes at room temperature. Dust flour on working counter and cut the pastry sheet into 4 squares.
- Prick the pastry sheets with fork on two of squares (bottom of pies) and makes 5 slits on each of the other two squares (top of pies).
- Transfer the bottom pastry sheets onto a baking sheet lined with parchment paper. Put the apple fillings on top, keeping about half inch space around the rim. Cover the pies with the top pastry sheet with 5 slits.
- Use a fork to press the edges. Beat the egg yolk in a small bowl and brush top of the pastry so it will turn nice golden brown when baked.
- Place a sprig of rosemary on the side of the pies. Bake for 15 minutes, or until golden brown. Serve with vanilla ice cream.

Simple Apple Pie Recipe
Prep Time: 5 minutes | Cook Time: 15 minutes | Yield: Makes 2 small pies
Ingredients:
- 1 frozen puff pastry sheet (Each box comes with 2 sheets)
- 1 Fuji apple
- 2 Tbps. butter, melted
- 1 Tbsp. sugar/honey
- 1 egg yolk
- a few small cubes of butter
- 2 sprigs fresh rosemary (optional)
Directions:
1.Preheat oven to 400F. Defrost the puff pastry sheet for 10 minutes at room temperature.
2. Peel and cut the apple into thinly sliced wedges.
3. Cut the pastry sheet in half. Prick both pastry sheets with fork and apply melted butter. Transfer the pastry sheet onto a baking sheet lined with parchment paper (which I forgot here).
4. Place sliced apple slices in the center area leaving 1/2 inch around the rim (so this area will puff up). Sprinkle 1 Tbsp. sugar.
5. Beat the egg yolk in a small bowl and brush the rim. Place small cubes of butter and a rosemary sprig on top. Bake for 15 minutes, or until golden brown. Serve with vanilla ice cream.

I love both versions of your puff pastry crust apple pie though I think I’d leave out the rosemary. Sweet and savoury together don’t really appeal to me but otherwise, the technique seems to be a winner. I haven’t done anything with puff pastry in ages.

I tried this the other day and put a smear of cream cheese under the apple mixture. I also can’t help myself and put a bit of cinnamon in with the apples. Your crust looks as flaky as dry Autumn leaves.
Puff Pastry is one of those tricks to a fast and delightful dessert! I always have some hidden in my freezer – your “pie” looks delicious!

These are beautiful apple pies, Nami or rather I would call the second one a tart. This is a bit similar to the apple tart I prepare. I love the addition of rosemary! It must leave wonderful aroma on the apples. Puff pastry is such a magical ingredient, isn’t it? I always make sure I have at least one puff pastry package in the fridge just in case…
I am not a fan of pastry cooking but I tried this one. In fact I made the two sets described here. I used 1 Fuji apple and 1 Granny Smith apple. I divided them between the two. I also used more sugar than this recipe called for. All in all I was extremely pleased and delighted.

Nami. I have made this simple apple pie six times so far. The last two times, I mixed apples and pineapples together. Outstanding taste! My grandchildren ate them while they were still warm. Adults had them with coffee.
I want to point out to the readers that if the puff pastry is left to rise to room temperature, it is very difficult to handle. My advise is as soon the puff pastry thaws out slightly, cut it and process it. DO NOT let the puff pastry become very soft. I wasted one batch as it completely disintigrated in my hands.
I have also used pre-cut puff pastry found in middle some eastern grocery markets. Again in order to handle the pastry, I did not allow it to completely thaw out.
Nami, one last request. Can you post a few more easy puff pastry recipes. All is greatly appreciated. Thank you.
Hi Alfredo! Thank you for pointing that out. I didn’t write clear instruction, but I start defrosting the pie sheet after apple filling is done cooking (step#4). You are absolutely right about difficulty in handling pie sheet when it’s defrosted completely.

These are easy and delicious. I am on a big puff pastry craze right now, it makes crust so much easier. The rosemary addition is perfect in my opinion.

This IS the easiest apple pie! I still have never worked with puff pastry dough, thinking it quite difficult, but you do make it look easy. I have lots of apples and this looks like a perfect little dessert for B and I. I love that you can make single servings!
I prefer the single pie version…much easier:D and less pastry in between apple slices and don’t need to cook the apples:D Sounds good and looks good!

I actually made this version for your “Mini Fruit Puff Pastry”. I debated between nutella and banana and this cooked apple filling. I used the “Joy of Cooking” apple pie filling version, which uses butter, cinnamon (omitting rosemary) and a pinch of salt. This recipe made me rejoice because 1) I have a Trader Joe’s brand box of puff pastry in my freezer and 2) I already had experience making this very recently and 3) I have rosemary in the fridge (from my neighbours garden).
I used Gala apple previously. I am excited to try this version amd compare the different taste!

it’s always amazing that something so iconic can be so easy to make. I love apple pie, especially with cream. Years ago, my daughter came home from an inspiring French lesson with a tarte tartin recipe, and I couldn’t believe it was so simple – almost the same, but made upside down (typical French!). It was inspiring, and became our “ta-ta-ta-ta-ta-tan” treat.
I remember when I was studying in the States, I loved the apple pies! This one reminds me of them. It looks absolutely irresistible!

Hi Nami, isn’t puff pastry wonderful stuff? You can create such visually impressive things so simply and people see it and they’re all like “OMG”, and you can sit there all happy and think “muahaha, this was so simple to make!” I love the look of the apple pies – the top ones remind me of something I buy here from time to time (to be honest I should just make them myself). Did you try sprinkling on some turbinado sugar on top of the pastry after painting it with milk or egg? Cooks to a lovely caramel crispy coating!

Perfect way to get those who normally don’t bake right into the kitchen and doing just that. I’d give this a try too! I’m sure the puff pastry works beautifully with the apples. And it’s so seasonal and pretty too. Beautifully done and great to do with the kids too, which I love.
I love puff pastry and how easy it is to make a beautiful presentation with hardly any effort on the cooks part. I was just thinking about using some the other night for this same thing but with a few tweeks

Very nice way to use puff pastry! I love the step by step photos Nami. This makes it easy for the beginner cook. I like making a quick apple tart like that. My mom makes the best apple pie ever, so it is hard for me to top her. Plus she has access to apples in Michigan that you just can’t find everywhere…especially here in Florida! :}
