Green Tea Cookie Recipe | JustOneCookbook.com Last weekend we took a short family trip to Seattle with my mom and our two kids.  We had purchased the Citypass and it was great since almost all the activities are geared towards children under 10.  Both children had a lot of fun visiting Space Needle, Seattle Aquarium, the Museum of Flight, and the Avatar exhibit at EMP Museum along with the Argosy Cruise.  As part of the package it also included a 3D IMAX movie show.  I could barely hold in my laughter when my son was reaching forward during the movie trying to grab at the virtual flower and grass.  I think Seattle is a great city to visit with little ones since there are many attractions for them to visit.

During the early part of this vacation, I received a kind offer from Roxana, the author of A little bit of everything, to do a guest post for me!  Roxana is very talented and she has a special skill that I don’t have – yes, baking!  She bakes all kinds of bread and sweets and has been inspiring me with her delicious treats.  I’ve been dreaming of baking bread for many years now, and her recipes with clear instructions are very encouraging.  She’s a baker as well as mom of a cute little girl.  I’m so thrilled to share these delicious green tea cookies she made exclusively for readers of Just One Cookbook!  Please give a warm welcome to Roxana.

Hello everyone.  My name is Roxana and I’m the baker, photographer and dish cleaner behind A little bit of everything.

Today I’m hijacking Nami’s blog, hope I won’t disappoint.  I’m honored to be here!  I start reading Nami’s blog a while back and I was hooked (like most of you).  Her amazing dishes with stunning photos made me come back time after time.  To be honest, I wish I was her next-door neighbor.  Hoping to change her mind and leave west coast for the east cost I’m bribing her with some green tea cookies.

Those of you that are familiar with my blog know I’m trying to go vegan, so lately I’ve been doing a lot of experiments with my new love Vegan Butter (don’t be fooled, even if it’s vegan it still has 100 calories per Tbsp).

These vegan cookies are exactly how I like them, with a crunchy edge and soft inside. Perfect with a cup of tea.  And they only call for 5 ingredients!!  Self raising flour, butter, sugar, applesauce and powdered green tea.

Just like a regular butter cookie the dry ingredients are crumbed with the butter. I usually use the food processor but this time I decided to do it by hand to have more control.  The powdered green tea added to the dry ingredients give the cookie a little zing, an Asian touch.  For a binder I used applesauce added a little at a time; use an egg yolk for a non-vegan version, if you prefer.

Let’s start baking.

Green Tea Cookie (Vegan)

Ingredients:

  • 2 cups self raising flour, sifted
  • 2/3 cup sugar
  • 1 stick vegan butter
  • 2 Tbsp. powdered green tea (or 1 Tbsp. Matcha)
  • 4-5 tsp. applesauce

Instructions:

  1. In a bowl put self raising flour, sugar, vegan butter, and powdered green tea (or Matcha).
  2. Crumb together the dry ingredients with the butter until the mixture resembles wet sand.
  3. Now add 1 tsp at a time applesauce to glue the dough together.
  4. The dough should resemble clay.
  5. Take small pieces of dough, shape them into balls and place on baking sheets.
  6. Put the baking sheets into the fridge for about 1 hour (or in the freezer for 30 minutes or more). Meanwhile heat the oven at 375F. Bake the cookies for 15 minutes.

These are such lovely cookies, Roxanna. Though not a vegan, I am all for substituting unhealthy products (especially those that contain animal fats) with healthier alternatives. I like the simplicity of these cookies and will have no qualms on eating lots of them :)

I made these a few days ago.I changed it up a bit and added more matcha powder. I’m not vegan so i used regular butter, a little less and a bit more applesauce. Turned out awesome. My brother doesn’t like anything green tea really, and he was appalled by the green color but he stole one in the middle of the night from my pantry and he wont stop eating them now XD.
Thinking of baking them a little less and then putting them in the fridge for a cold treat in the summer.
LOVE THESE COOKIES <3 addicted to them now

These cookies are delicious! I used Sweet Matcha Powder, but they turned out perfect! I couldn’t refrigerate my cookies, not enough space…so they ended up staying the same shape. But they are good! Thumbs up to this recipe, it passes my inspection!
