Kale Soup Recipe | JustOneCookbook.com I’ve been still struggling to recover from a recent cold and all I want is to have delicious warm soups.  Then I remember that I have this really good Kale Soup recipe post that I haven’t been able to share this summer due to all the BBQ and Ice Cream recipes I posted.  Now it seems like a perfect time to share this post as this is a quick, delicious, and nutritious soup!

I saw my friend Patty’s Kale Soup post on her blog Patty’s Food back in May and I was really excited to try this recipe.  Kale is a green, leafy vegetable that is part of the cabbage family.  Kale provides iron, magnesium, fiber and is loaded with vitamins A and C.  I like to make a soup with it or bake it into kale chips.  Speaking of which, my friend Divya from Flavor Fiesta made a really cute video on how to make chipotle-flavored kale chips that I love below.

Back to the Kale Soup, this is a really easy and appetizing soup that I hope you will give it a try.  With the leftover Crème Fraîche (the white cream on top of the soup – I bought it at Trader Joe’s.), I baked something with it to be shared on the next post.  Have a great week everyone, and stay well!

Kale Soup Recipe

Prep Time: 15 minutes

Cook Time: 20 minutes

Yield: Serves 4-6

Kale Soup Recipe

Ingredients:

  • 2 garlic cloves
  • 3 small medium Yukon Gold potatoes
  • 1/2 large yellow onion
  • 6 cups baby kale, lightly packed
  • 4 Tbsp. unsalted butter
  • Sea salt
  • Freshly ground black pepper
  • 1 quart chicken or vegetable broth
  • 6 Tbsp. Crème Fraîche or sour cream for garnish
  • Mint leaves for garnish

Instructions:

  1. Minced the garlic and peel and chop the potatoes and onion. Rinse the kale in running water and drain it well. Remove the thick stems.
  2. Melt the butter over medium heat in a heavy soup pan (I used Le Creuset).
  3. Add the garlic, onions and potatoes to the soup pan and sprinkle on salt and pepper to taste. Stir and cook for several minutes.
  4. Add the chicken/vegetable broth and bring it to boil.
  5. Skim off the scum and fat from the soup until clear in order to get refined taste.
  6. Gently simmer with the lid on for about 15 minutes or until the potatoes become tender.
  7. Add the baby kale and cook without the lid for about 2-3 minutes or until tender.
  8. Transfer the soup into a blender and pulverize. Remove the little circle part of your blender top and put a towel over the entire lid of the blender, covering the hole. This will allow the steam to escape so the top won’t pop off.
  9. Pour the soup back into the soup pan. Adjust the seasoning based on yuur preference and serve into bowls. Garnish with the Crème Fraîche and mint leaves.

What, Nami? You can’t have a cold as a busy Mum! This does look good and love the colour. I saw just how popular kale was on our trip to NYC as it was on menus and these kale chips everywhere. I bet these would also be a good garnish but love the mint. Stay well.

I like kale soup, I mean… I use cavolo nero which I guess is a type of Kale :-) . But I haven’t tried the chips yet. Soon or later :-) .

I love kale… I learned about this vegetable here in Sweden where it is very common in winter and it is also very cheap. I use kale in a soup like the one you made, only I put extra-virgin olive oil on top instead of creme fraiche, I have also filled pizza dough with kale… so good:

I have had chopped kale in soups.. but never pureed. I LOVE IT! I’m sorry to hear you are suffering from a cold… they are simply miserable. I am waiting for my kids to bring home the influx of germs to get us all sick like every school year. Urgh… that’s the only complaint I have about school. Hope you feel better!! Nami, this is one healthy soup – we eat a lot of kale around here, my grand-mother used to prepare it all the time, as a child I did not really care for it all that much but tastes change and today we enjoy kale soup. The video really is cute and your recipe is so well put together and it all looks so appetizing, great post! I do hope that you will be feeling better very soon and I am certain that having a bowl of this soup helps!

It’s surprising, but I haven’t ventured into actually cooking anything with kale besides the chips. The soup sounds like a fantastic way to get more kale into my diet and it’s easy too! Oh..and looking through the pictures, I noticed you have packaged kale there. I had no idea that packaged kale exists! Never seen it here in Toronto. If I could get my hands on packaged kale, I’d have kale chips everyday..haha!

I usually don’t see “baby kale”, but I would assume any type of kale or size would work, especially since it’s blended? Hope you are feeling better and have a wonderful week ahead!

I just had a chance to try out kale two weeks ago after reading so much raves about it. Love the vegetables and they are a great substitute to many Asian greens I couldn’t find it here. Looking at the gorgeous green of your kale soup, I should really try this out. Never say no to a good looking and tasty soup.

Oh dear! I sure hope you feel much better soon. I do know how it feels. I was once down for close to a month with a nasty cough and cold. I just despise catching these bugs but it’s unavoidable at times. I have not had Kale soup before, and am bookmarking this recipe. Will definitely share this soup with my family. What a gorgeous, glowing green soup! I would never probably guess it’s with kale because I have never had kale (every time I see it on markets I promise myself I would buy it and then forget…). I love the fabric under the soup, it’s particularly beautiful! And it goes perfectly well with the green hue of the soup. Anyway, I hope you feel better now!

I love kale, it is a staple in our household. I haven’t tried kale soup, this is definitely in my bucket list of recipes.

It seems like everyone has been getting sick lately, my husband’s fighting off one now. I’ve been pouring chicken soup into him, but this seems like an excellent switch.

Hi Nami,

I am new to your site-I found it searching for Mentaiko Udon recipe. I was so inspired by your lovely words and beautiful pictures. I made the kale soup today since it is cold and rainy in Vancouver today. The soup turned out delicious and beautiful. My hubby had a cold and totally loved it.
