Nutella Banana Bread

Surprise!  It’s one of the rare occasion on Just One Cookbook to have baked recipes featured back to back.  I’ve been really busy lately and I haven’t had the time to write new Japanese recipes that I’ve cooked and photographed.

With the busy schedule, I still try to find time to make and provide my children as much homemade snack as possible.  The Banana Bread I shared a while back is one of their favorites and I’ve given it a twist with this delicious Nutella Banana Bread.

Back in August I won Grandpa’s Honey giveaway at Tutti Dolci.  I typically buy honey from Trader Joe’s but I had been looking for really good honey.  This honey was a wonderful discovery – the flavor is so rich, and it has smooth silky texture and has nice fragrance to it.

I’m really hooked on this delicious honey and to thank Laura at Tutti Dolci for this gift, I made this Nutella Banana Bread with this honey, adapted from her Almond Butter Banana Bread.  Can you smell the  Nutella and banana combo?  Yum…  Hope you will enjoy making this for your breakfast or tea time.

Nutella Banana Bread Recipe

Prep Time: 15 minutes

Cook Time: 60 minutes

Yield: Makes one 9 x 5 inch loaf

Nutella Banana Bread Recipe

Ingredients:

  • 1 3/4 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/8 tsp. allspice
  • 1/3 cup Nutella
  • 1/2 cup honey
  • 1 1/2 cups mashed ripe banana
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. almond extract
  • Topping
  • 2 Tbsp. sliced almonds
  • 1 1/2 tsp. turbinado sugar

Instructions:

  1. Preheat oven to 350°F. Spray a 9 x 5 inch loaf pan with nonstick spray and place a sheet of parchment paper on bottom.
  2. Whisk all the dry ingredients (flour, baking powder, baking soda, salt, cinnamon, and allspice) together in a large bowl. Make a well in the center of the mixture.
  3. Combine Nutella and honey in a small bowl and heat in the microwave until melted, (about 30 seconds) and cooled slightly.
  4. Combine mashed banana, buttermilk, egg, and extracts in the medium bowl.
  5. Add cooled Nutella-honey mixture in the medium bowl.
  6. Add to flour mixture in the large bowl and stir just until combined.
  7. Pour batter into the greased loaf pan and top with almonds and turbinado sugar.
  8. Bake for 50-60 minutes, rotating the pan halfway through. The bread is ready when an inserted skewer in the center comes out clean. Remove from oven and cool in the pan on a wire rack for 10 minutes, then remove from pans and cool completely.
  9. Wrap the bread well and store at room temperature up to 2 days, or in the refrigerator up to 4 days. To freeze, wrap tightly in foil or freezer wrap.

I baked this bread in the morning but couldn’t photograph it before my daughter came home from her preschool.  After lunch, we did the photo shoot session together.  She was a pretty good assistant.  But she also insisted that her setting below be photographed and shared.  So here we go…

Nami dearHeart: the last thing I want to do is to ‘rain’ on your absolutely wonderful blog! But, are you aware ‘Nutella’ is over 60% sugar/saturated fat and one of the most healthwise dangerous items you could put in your mouth? It has actually had to be withdrawn from some European food shelves! More, so I have been told, have been planned! I certainly would not dream of having it in my home or kitchen! Sorry to be negative :) !

Hi Eha! Good to know – I was not aware of that. I started to buy Nutella this year after seeing so many Nutella recipes on blogs and have been enjoying eating… I should cut down on my consumption especially when I need to lose my weight! Thanks for sharing your knowledge with us!

Nami, it looks so perfect! How many loaves did you have to bake before you obtained such a neat, professional looking bread??? I am in awe!
Frankly speaking, as much as I like bananas, I am not a fan of the banana bread, but your Nutella addition must completely transform the basic banana bread taste and make it luscious. Thanks for the wonderful idea (I still am left often with overripe bananas… so I will certainly try your idea).

Tell me about busy schedule Nami! I used to post twice a week, but as my son grows older and my job becomes more demanding I limited my posting to just one per week and sometimes I find it hard to follow even this! Banana and nutella match perfectly and I am sure this cake would be a success especially among the young ones of the family!

Laura really has very good recipes and your version looks so good too! I love banana bread ever since I was a kid. The picture with the giraffe made me smile because my kids, especially my daughter likes to put “unnecessary” props too in my setting so I have a lot of photos with her hands in the pictures. LOL! Girl – when you bake, you really bake! Banana Bread is one of my favorite quick breads, right up there with cranberry bread. I’ve never seen one made with nutella, and OH – it sounds SO good – like a chocolate covered banana!

Nami-san, the addition of nutella is a very classy and must add a rich flavor to the bread. Your giraffe is almost as cute as your loaf of nutella banana bread. Dear Nami,

Your daughter’s setting is absolutely adorable. I used to like nutella as a kid but have fallen out of it since I don’t have a sweet tooth. I know a few people who absolutely love nutella but I understand there is quite a fair % of sugar in it.

I think the second setting is the way to go! That little giraffe brightens up the photo. I love the combo of Nutella and Banana Bread. I don’t like chocolate chips or chunks in my banana bread so this would be perfect and I love Nutella.

This Nutella Banana Bread is absolutely a great combo. I loved your daughter’s lil friend in the photograph (very cute)! I love Nutella and I can’t wait to try this recipe. I was recently in Paris on my honeymoon and saw Nutella filled on the shelves.

Nutella and banana are one of my all time favorite combos!! I don’t eat Nutella on anything else… I know a certain group of girls (Liv’s carpool) who would adore me even more if I brought them this bread. It’s going to the top of the list!!
On another note, isn’t it wonderful to find a good honey? I’m going to have to check this one out… we are always on the lookout for new honey.

As for the cookies, I Googled to see the image of what you are talking about but I cannot find… Do you have any picture of it? As you know there are so many kinds of Japanese confectionaries at the airport and I can recognize some but not this one…

Hi Nami, I am with Eha on this – it is so misleading it call it a hazelnut spread when in fact it has less than 10% hazelnuts. Here is a good article about it: http://foodwatch.com.au/blog/additives-and-labels/item/nutella-the-full-correct-list-of-ingredients.html

But I am sure you could just use extra butter, cocoa and maybe hazelnut meal instead… ? It would be fantastic nutritionally wise – it looks fab already.

Hi,
I made the Nutella Banana Bread 2 times today. 1st time i used homemade buttermilk – mix milk with vinegar… disastrous! Tasted like uncooked flour inside. Then 2nd time, I used milk only but somehow it did not taste sweet enough for me. Is it because my bananas are not ripe enough?

Hi Lily! Thank you for trying this recipe! This recipe relies on honey, Nutella and banana for sweetness. So if this is not sweet enough for your liking, you need to increase honey or maybe Nutella. Overripe banana definitely helps for natural sweetness too. Overall this is not bread that is very sweet like cake or some pound cake. You can exchange honey with sugar and that helps it sweeten more. Hope this helps. :)

Hi Rosemarie! I think you can! For the original recipe, almond butter was used, but I changed it to nutella. :) Hope you enjoy!
