Peanut Butter Chocolate Chip Cookies Recipe | JustOneCookbook.com Today is the day before Christmas Eve and my children are so excited that Santa is coming soon.  We arrived home from Taiwan yesterday evening and we’re trying to recover from jet lag.  Without having time to take a breather, my mom is arriving this morning from Japan to spend Christmas and New Years with us!

I’m thinking of baking these delicious Peanut Butter Chocolate Chip Cookies with my mom and the kids today along with some other cookie recipes that I’ve found from other blogs.  I know we’re a little behind in cookie making this year but the children are reminding me that we need to bake cookies before Santa comes.

Last month Erin from Dinners, Dishes, and Desserts told me her Peanut Butter Cookies recipe is so easy that even I, who doesn’t bake often (or doesn’t bake at all), can bake these.  My first reaction was “no butter and no flour? really?”  I didn’t even know it’s possible to make cookies with just 3 ingredients (original recipe doesn’t have chocolate chips)!  I took her suggestion and tried baking these cookies before my trip to Taiwan.  I was really surprised how easy it was to bake these cookies and how delicious they turned out.

From the original recipe that Erin provided, I adapted a little bit by using brown sugar instead of all white sugar.  Also I used extra crunch peanut butter for the crunchy texture that I always enjoy.  Other than that the recipe is so simple that I have nothing else to add.  They were simply scrumptious!  Thank you Erin for the recipe!  Also I want to thank you Mai from A Cup of Mai for this very useful small cookie scoop that I won from her giveaway LONG time ago…  It was so easy to make the same size cookies!

Peanut Butter Chocolate Chip Cookies II

Peanut Butter Chocolate Chip Cookies

Prep Time: 10 minutes

Cook Time: 10 minutes

Yield: Makes 16-20 cookies

Peanut Butter Chocolate Chip Cookies

Ingredients:

  • 1 cup extra crunchy peanut butter
  • 1 egg
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/3 cup semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350F degrees. In a medium size bowl, stir to combine the peanut butter, sugar, brown sugar, and egg. Add the chocolate chips and stir again.
  2. Using a cookie scooper or a 1 teaspoon measuring spoon, drop the batter onto a large baking sheet.
  3. Bake the cookies for about 8 minutes or until lightly browned. I prefer crunchy cookies, so I bake about 9-10 minutes (my oven usually requires a bit more time than most recipe instructions).
  4. Remove from oven and let sit on the tray for 5 minute before placing them on a wire rack to cool (because they are really soft).

Happy Holidays Nami – I hope you have a wonderful time, not only with your mother but surrounded by your wonderful family! Delicious looking cookies – If I were Santa, I would feel honoured to have them left for me with a glass of milk ;)

I remember that when Santa visited me he always left me an Apple and a Clementine as well as the rest of the things! I suppose dental hygiene is important to Santa :D :D

Nami, I am so happy you are back and that apparently you have had lots of fun in Taiwan. Your cookies look perfect and luscious as all the sweet treats you have posted on your blog! I have always been convinced you would make a terrific baker and the above photos are the best proof.
I had no idea such a thing as a cookie scooper existed, so thank you for giving me the idea for another gadget (my cookies never have the same shape).

I have never made a cookie without flour…how cool is that?!! Not much of a baker myself either. These look perfect and must be all flavor! I love my dough scooper, great for biscuits too. I really like the photos.

I do love peanut butter cholocate chip cookies! The combination of these two fabulous ingredients can beat anything. I can’t get these great “American” soft cookies here in Japan (I must say… not in entire Japan but in where I live..). I should bake if I can’t buy what I want. But the problem is… my oven doesn’t work properly:-( I would get one as soon as I can.

Wow, I cannot believe there are only those 3 ingredients in the cookies. Super for peanut addicts, like my mom. I hope you are having a wonderful time with your mom till the very last moment. hey! i made these this weekend but im wondering if u flatten the ball of cookie dough u put on the baking tray? coz u didnt mention whether u do and i left mine as balls thinking they melt down to flat cookies in the oven but they didnt :( they were round balls…still taste good tho…great recipe!! xx

Hi Amrita! Aww thank you for trying this recipe! Nope, I didn’t flatten them. They were just like how you see them in the picture. I scoop it up and put it down…so it’s sort of loose, unlike it’s a “ball” shape. Did you roll the dough? I wonder if that can be a reason… next time use two tea spoon to scoop up and drop on the baking sheet. :-) Cooke scooper just helps to make the same size cookies, but there is no need to make balls. :-)

yeah i did roll it…thinking it wld just melt in the hot oven (from previous cookie recipes) ill do the tea spoon thing ….mite be my peanut butter here in australia…i used Kraft Crunchy peanut butter….
