Potato Salad Pork Roll Recipe | JustOneCookbook.com Japanese cooking uses thinly sliced beef and pork for many dishes.  One of the most common way to utilize these thin slices of meat is to roll something with it.  In my blog, I’ve shared several beef and pork roll recipes so far and they are:

Using sliced meat allows us to be very creative and I like hiding veggies in the meat so my kids tend to finish the vegetables with the meat (without even realizing they ate veggies).  The recipe I am sharing today is related Wednesday’s Japanese Potato Salad.  With the leftover potato salad, you can roll them with sliced pork.  This is my mother’s recipe and my dad, my brother, and I used to love eating this.  It’s one of the dishes that I feel nostalgic about.  I hope you enjoy this delicious pork roll.

Potato Salad Pork Rolls II

Potato Salad Pork Roll

Prep Time: 20 minutes

Cook Time: 20 minutes

Yield: Serves 4

Potato Salad Pork Roll

Ingredients:

  • Japanese Potato Salad (I usually serve half as salad and use the other half for this roll)
  • 1 pkg (5 oz) sliced pork (for shabu shabu) from Japanese market
  • ¼ cup corn starch
  • 1-2 Tbsp. sesame oil
  • Sauce
  • 2 Tbsp. soy sauce
  • 2 Tbsp. mirin
  • 1 ½ tsp. sugar
  • ½ tsp. ginger, grated

Instructions:

  1. Place Japanese Potato Salad on the bottom end of a piece of sliced pork and roll to wrap it up with the sliced meat.
  2. Dredge the rolls in corn starch or sprinkle corn starch on top of rolls. Remove excess corn starch off from the meat.
  3. Heat 1 Tbsp. of sesame oil in a large skillet over medium high heat. Gently place the meat rolls in the pan and brown all sides. Do not touch the meat unless the bottom of the meat is nicely golden color. Then turn to brown all sides. If you start turning the rolls too often, the potato salad will come out from the side. If you need more oil to brown the meat faster, add another 1 Tbsp. of sesame oil.
  4. When all sides are nicely golden browned, cover and cook 3 minutes on medium-low heat.
  5. Add Sauce. Shift the frying pan and rotate the meat rolls to coat evenly. Serve immediately.

I love this! The potato salad recipe was great and I love that you gave us something to do with the leftovers. In New York they sell shabu shabu meat at quite a few places (like Sunrise Mart in the East Village) but here in Israel the closest thing we’ve got is chicken breast pounded very thin for schnitzel :-) But now I want to try rolling that!

Nami, on Wednesday I wanted so much to make a potato salad as soon as I saw your post, but now I know I will make a huge batch of the potato salad only to have some leftovers and make these gorgeous rolls! They look at least as delicious as your Mashed Potato Pork Teriyaki Rolls which I have made at least dozen times and which are always excellent. (What are the cute green leaves on the first photo? Are these radish sprouts?).

We call it “Kaiware Daikon”. I’m not quite sure the English name for it… It has some bitter taste to it. We often use it for decoration or sushi or salad.

That is such a great way to ‘recycle’ left-overs without giving the dish a ‘left-overy’ feeling. It sometimes comes in handy not having to do everything from scratch on one particular day. So far, I have only managed to pan-fry left-over potatoes or pasta. :)

Oh, and the fabric is just too cute! Kinda poppy just like I could pop your little rolls right into my mouth! ;)

I LOVE IT! Hiding vegi in adorable rolls! Before “meeting” you, I never really know what to do with shabu meat. My Mom would only buy them when we eat hot pot at home, I used to buy them and cut the slices to smaller size for stir fry, really saved time on preparation. Though the rolls are just so much more fun to prepare and eat!

It’s still crispy because of the corn starch that I applied before cooking the meat. The meat is kept in shape and the corn starch will thicken the sauce later on. :-)

These pork rolls look and sound so delicious! I don’t usually have a stock of potatoes at home though, so it might take some time until I’ll make them – I am more a rice person ;) . I always somehow find that making something out of potatoes to be so much work ;) . I wish we lived nearby that I could just knock on your door and beg you to give me some of these delicious-looking pork rolls, hehehe…;).

Nami-had you not shown the step-by-step directions on the yummy pork rolls, I would not have any idea, even with the recipe and directions!

Thats a great tip! hiding veggies in a roll of meat. In the Philippines we also have some similar tricks for kids to eat veggies like chopping them into small pieces and put them in a soup this was it will be hard for them to remove one by one every vegetables they see and flavour wont be over powering the dish they are eating as it is consumed in small amounts. But for me I never had issue with my daughter she eats everything without complain :)
