Strawberry Dressing Recipe | JustOneCookbook.com Thank you everyone for your kind messages on my 100th (previous) post!  I’m glad you enjoyed my “baked” dessert and I do hope that I will be able to make more desserts in the future.

Today I’d like to share a delicious strawberry salad dressing before the strawberry season is over.  I know it not quite time yet but we should all enjoy strawberries while they last!  When I just started blogging, one of the sites I had found was Peggy’s blog, My FIANCE Likes It, So It MUST Be Good.  I can’t remember how many recipes I have bookmarked from her site, and this was one of them.  I recently gave it a try and it turned out to be really delicious and our entire family enjoyed it, even the little ones.  I pretty much followed her recipe with a slight change, I added one squeeze of lemon and also sprinkle walnuts over the salad.  Thanks Peggy for the great recipe!

Strawberry Dressing

Prep Time: 10 minutes

Yield: Serves 4

Strawberry Dressing

Ingredients:

  • 1 cup (about 5.5 oz) strawberries
  • 1/3 cup olive oil
  • 1 tsp. balsamic vinegar
  • 1 squeeze of lemon juice
  • For Salad
  • Mixed green
  • 2-3 strawberries, sliced
  • Roasted walnuts (optional)

Instructions:

  1. Wash strawberries and prepare mixed green in a serving dish.
  2. Right before you serve salad, combine strawberries, olive oil, balsamic vinegar, and lemon juice in a blender or food processor and mix until smooth. Serve the dressing in a bowl or small pitcher and pour the dressing before you eat.

Nice and simple, I will remember this. I had sort of a similar salad with tomato yesterday, I can see how strawberries will blend in nicely, thanks for sharing

What a fantastic idea! I am a big fan of fruits in salads! But I had never thought of using it as a dressing! Very clever! I have bookmarked it for our strawberry season! ;-) Happy Father’s Day weekend to you guys… in Australia we celebrate in September! ;-)

I seldom prepare salad and only know to buy from supermarket the ready pack salad. Beside this lovely salad, what other dishes you serve along with this salad ?

I love love strawberries… it’s so versatile! you could make it as a smoothie, you could make it as a fruit combo with a dessert, you could have it doled up with cream ahhh luscious cream or you could have it as healthy as your salad… and yeah not to mention the kind of dressing that you have.. it’s a refreshing way to use strawberries. Love it!

This looks great- i love the color in your photos. How long do you think this dressing keeps for? I have a bunch of strawberries I need to eat that I bought to do various things with, but I’ve been too tired this week. LOL This salad looks so fresh and summery!

This sounds like the simplest ever dressing & new to me.I just know what to do with my greens & strawberry box sitting in fridge for 2 days.I usually use up the leftover fruits in baking etc- this dressing idea is so unique — thanks for sharing.Have a lovely weekend!

Nami, I have never had strawberries in a savoury salad (only fruit salads), but both the salad and the sauce are very seducing. The dressing reminds me the hot strawberry sauce I make every year and, if you say it is very good, then it confirms once more the fact that strawberries go very well with the vinegar! I must try your salad before the strawberry season ends.
On your photos the dressing looks like a strawberry smoothie. Weren’t you tempted to drink it ;-) ? Have a great weekend and have a well merited rest!

Yum! This sounds delicious. I’m still waiting on REALLY good strawberries…I still havne’t been able to get my hands on any. But when I do, I definitely want to make a salad…love berries in savory salads.
