I caught a slight cold over the weekend and wanted some warm comfort food. In Japan, instead of chicken noodle we eat simple kitsune udon to recover our strength. Sipping the natural dashi broth and enjoying the warm udon noodles, I think I already feel better.

Quick Homemade Chashu 簡単チャーシュー

No bowl of ramen is complete without chashu. Traditional Japanese chashu is typically pork shoulder rolled into a log, tied together with string and stewed. My recipe uses pork belly instead of pork shoulder because I prefer pork belly's layers of textures, from fatty to lean meat. During the cooking process, each layer absorbs the sauce at a slightly different rate and tastes different. The end result is simply ... amazing.

We love Latino food in our household. Whenever we go to our neighborhood Mexican restaurant, our kids go through the tortilla just like paper shredders. Zoom and it's all gone. It's been a while since I posted a side dish so I want to share a popular green bean recipe. Side dishes (Osouzai, お惣菜) are predominately vegetables. As I had mentioned in my previous posts, typical Japanese meal consists of a bowl of rice, a bowl of miso soup, the main dish, and 1-2 side dishes. A popular way to prepare side dish is Shiraae, mixing lightly-cooked vegetables with crumbled tofu, miso, and sesame seeds. Spinach and green beans are commonly used for Shira-ae dish.

I am not much of a baker for someone who spends quite a bit of time in the kitchen. Maybe it's because most bakeries in Japan are simply amazing so we don't try to make too many dessert at home. There's a bakery near my house in Yokohama where the fresh cream taste just like heaven. When my friend Ellena asked me if I knew how to make Japanese steamed bread (Mushi Pan), I went to search for a recipe that looked yummy.
